What comes out is careful Southern Thai home food: pak miang leaves with egg and smoky dried shrimp, a peppery kaeng liang, and a stir-fry of iem to, a rare pork cut from Hokkien butchery. Worth the planning for anyone curious about Phuket's own cooking.
